Car Alarms: 1999 CRV Valet Button Operation, valet mode, remote transmitters

Hi there just purchased a 1999 crv from a private sale and forgot to ask about the alarm operation.  I was given only one fob so I purchased two more aftermarket but they don't work with the alarm so I set it off last night.  I read on the Internet there is a "valet" button under the left side of my steering column.  I understand if I put the car into valet mode I can then use my aftermarket fobs without setting off the alarm, is this correct?

Also how do I put the car into valet mode, do I turn the ignition to one before starting it and then push the valet button?

If I set the alarm off with the new fobs somehow do I put the car into valet mode to shut the alarm off (last time I pulled the battery cable but I still needed the original fob to disable the alarm), if this does not work is there a way to shut the alarm off if I set it off and I don't have the original fob?
