Audio Systems: Mobile Recording, student recitals, input and output devices

I would like to provide on-location recording services to churches and student recitals. I'd like to record, mix, master and deliver a CD recording immediately after services.
Could you please tell me what kind of setup I'll need? I have a Mac Pro 2.8Mhz, 4 gig laptop, and Pro Tools. What kind of cordless mikes would provide quality sound for this endeavor?

Are you actually working in Pro Tools or is it an installed program? I ask because to use Pro Tools well, requires a fair amount of training.
There are stand alone devices made by Yamaha and Korg that take most of the setup out of the set up (Korg D888). By that I mean that you will need an interface for your Mac to connect input and output devices. If you are using Pro Tools you are set up to do multi tracking. Do you have an M Box or other DAC with multiple I/O ports?

As far as wireless mics are concerned most are cardiod which means that they are designed to capture one voice or one instrument. What kind of recording quality are you looking for? How many simultaneous tracks do you want to record? What is you budget?
