-----Question-----
I have (2) JL 10w3v3 subs rated at 300 RMS and 600 PEAK.  Im looking at the JL 500/1 amp, and I am a little confused on whether to go with 1 or 2 channel, and the amount of power to give the subs.  Thank you!
-----Answer-----
no prob!  usually a 1 channel amp is recomended to run subs.  the only time it makes sense to use a 2 channel amp is when bridging the amp makes it match the ohms of your subs better,  also most 1 channel amps can be too powerful for some setups and buying a smaller 2 channel amp is more cost effective and dosnt have too much power when runing a single sub.
Hope that made sense.
there are 3 versions of this sub available.  a 2 ohm, a 4 ohm and an 8 ohm version.  I cant tell you if this is the right amp for these subs or not without knowing this.  can you tell me so I can help you?
as for this amp in general, I have mixed feelings about it.  although it may be a good amp, I havent heard it or experimented with it so I cant really say, but I dont like how the specs simply say it puts out the same amount of power from 1.5 ohms up to 4 ohms.  I dont know if they have something truely designed to do this or if they just try to make up fancy technical terms to pretend why the amp does this.  but I dont think I'd buy this amp.  I read a few reviews and it showed decent power with sub par efficiency.  etc.

the amount of power to give these subs should be what they are rated for.  you have 2 subs each capable of using up to 300 watts.  so you need a total of abou 600 watts.  its best to stick to the rating in my opinion.  and then there's the ohms thing. amps (usually) put out different amounts of power depending on the ohms of the speakers, so  again I'd like to know the ohms of the speakers to help you better.

Answer
ok, so if they are 4 ohms each, then wired together in parallel would make a 2 ohm load.  this amp is supose to run anywhere from 1.5 - 4 ohms with the same 500 watts. so in that regard you're within the operating range so yes, if you used this amp with these subs they'd get 250 watts each.
I still dont know how much I like this amp.  I read up on how it runs multiple loads and apparently it drops its voltage when it senses the load increases.  that works and all, I'm just not sure why they did this,  maybe just to make it easy on customers so they dont have to worry about matching the load anymore?  personally I still say I wouldnt get this amp. Although it may work fine for you, first of all I think it's a little overpriced and maybe part of that cost is in this "feature" that I dont like in the first place, know what I mean?
