-----Question-----
please make a recomendation for changes to the following setup...
I am currently running:
Sony MEX-1GP deck
stock door speakers
2 10" kicker L7 subs
1 memphis 1100 mono block amp
1 1 farad cap

I built a VERY sturdy sealed box as I wanted tight clear bass and all of my calculations for enclosure volume match the Kicker L7 manual.  Low volumes sound excellent but my subs sound distorted at higher volumes.

Do I not have enough power for these subs in a sealed encl?
Should I invest in Dynamat?
any assistance would be appreciated.

the 1100 memphis is the MCD1000 amp??  this amp is rated for 1100 watts into a 1 ohm load.  the L7 is available in a dual 2 ohm version or a dual 4 ohm version.  it depends on which one you have and how you have it wired. you could either be pulling very little from this amp or putting too much of a load on it.  do you know exactly which model you have?  10L74 or 10L72 and how they're wired (series, parallel, mixed)?

and really for sound quality improvement, if you're going to buy anything, replace those stock door speakers. that should give you a lot of sound quality improvment.  I like the Polk DB6500 components personally.  run them on an amp too for even better sound and make sure the amp is highpassed around 80-100 hz.

Answer
well then there's part of your problem.  if each sub has 2x 2 ohm coils, and you've wired them each in parallel that means that each subs is then 1 ohm each total.  when you put 2 of those together in parallel on your amp then your amp is getting a 1/2 ohm load which its not made for.  you're over loading your amp.
