Answer
Hi Marco,
I wonder if you are too concerned about the temperature gauge? It may not be accurate. But even if the temp sender and gauge are correct, I would not be concerned as long as it doesn't reach full scale H, stays there, and with overflow from bottle. That is when you should turn off the engine and let it cool down and then replace the lost coolant in the bottle. It is normal in very hot weather for the high speed fan to come "on". It does that at 230F (110C). But a 50/50 mixture doesn't boil until 265F.
On the question of the water pump, it may be not working like it did when it is new but that is not a reason to change it. I would only change the pump when it started to leak or the system boiled over regularly if you have the 3.3L engine.
If you have the 3.5L engine I would change the pump when you have to replace the timing belt because it breaks or is worn to the point of needing to be changed. When you change that timing belt is the time to change the water pump because they are part of the same repair job.
I would not run the engine without a thermostat: in the winter it will not warm up quickly enough without a thermostat.
Let me know if I haven't answered your question.
