Question
how many mustangs were made stick shift and how can i tell if its a 289 or 390. Also do you know how much horse power does a 400 mopar have

Answer
The engine ID is on the plate that you see when you open the driver's door and look at the back surface of the door.  The engine code will be C, A or K if it is a 289. If it is a 390, it will be Y, H, Z or S.  The different letters tell you more about the engine (carburetor, compression ratio, etc.

The only info I have on transmissions is that about 7% of 67s had 4 speed transmissions, the rest were split between 3 speed standard and automatic.  I can guess that the automatics were about 80% of those, but I have no data on it.

Since there were a total of about 470,000 total made, that would say that about 33,000 had 4 speed sticks, 88,000 had 3 speed sticks, and the rest had automatic transmissions.

Chrysler corporation 400 cubic inch engines (MOPAR) were rated at either 175 HP or 190 HP, depending on model, in 1975.  Other years would have been just about the same.
