Classic/Antique Car Repair: correct cruzing temp on 350 dual carbs, radiator fan, dual carb

my 1940 dodge coupe automatic,  has a 350 dual carb motor, new radiator/fan/oil and trans cooler/currently adding a shroud. It runs anwhere from 180 to 200 depending on traffic. I would like it to run cooler, but need to know what is the correct running temp? I live in VA where it is hot and humid. Temp goes up at red lights and when traffic is backed up. Makes me nervous when it get to 200. Although the temp slowly drops down after I get the car going, I do put it in netural when at a light.
Can you please tell me at what temp. is should cruz at?

200 aint bad I put in a 160 and i drill small hole on base of thermostat and drop it in with hole towards front of motor, or you can take the one you have in right now and play around by drilling 2 holes on the base...or brim of the hat
