My explorer has 68,000 miles and I am starting to notice that sometimes the engine doesn't respond as if it is getting full power.  This doesn't happen daily but I have noticed that it is happening frequently; it almost feels as if I am driving into a hard wind sometimes but all other times it responds and drives just fine.

Is the check engine light on? It almost sounds as if the engine has gotten moisture. That happens a lot in a heavy rain, or when you inadvertently try to clean the engine at the self service car wash. You get damaged coils when this occurs, and it sounds if that may be your problem. The other more plausible possibility is a logged fuel filter.
