Hyundai Repair: 30000 mi maintenance, transmission fluid change, coolant system

Question
I have a 2001 elantra that when taken to the dealer and paying for scheduled maintenance I have found that much of the things the maintenance schedule calls for are not truly done i.e. My shop manual shows a canister filter change on the transmission but there isn't one. Also, the fuel filter on the gas tank, the dealer said it doesn't need changed even though it is scheduled. I don't like paying for things to be checked and not replaced. I also have a 2006 sonata and it is due its 30000 mi. maintenance. I don't have a shop manual for it because the one I purchased for the elantra was terrible. My question is what really needs done on a 30000 mi maintenance for a 2006 sonata. Assuming I change the Trans fluid, is there a filter? How about the fuel filter? What about the a/c,brake fluid etc.
