I have a 1987 Jaguar XJS 12 in great condition. I just had all of the wires and plugs replaced as well as a new battery 5 months ago. The vehicle is garage-kept but driven at least once a week. I having a challenge with starting the car recently - the car must be jump started to be driven. Short of a brand new battery going bad, could it be the coil?

Yes, it could be one of the TWO coils. However, if a jumper battery helps it to start you need to test the charging system and the available voltage to the coils when the starter is engaged. A bad coil or both is not going to be well if a jumper battery is used so look closer at the charging system and check for a battery draw when everything is turned off.
