Motorcycle Repair: Custom Bobber Project, frame accessories, mechanical experience

My good friend and I have decided to start building 2 bobbers.  We have some mechanical experience from highschool but are in the dark for the most part in the bike arena.  My buddy is a welder so that's good :)

Triumph, BSA, Yamaha, or a Harley are some makes that we'd like to build on.

What models in each of the above manufacturers would be a good engine to start on?

What models are known to suit tall people? (I'm 6'4")

Where do we start? What should we be after first?
Resources? Imperative shop equipment?

Any knowledge would be greatly appreciated.

Sho, I could write pages and pages in response to your questions and still not give all the info you need. :-) Suffice it to say that what bike, frame, accessories and shop equipment you get are wholly dependant upon your budget.
