Motorcycle Repair: bike starts but wont idle, speed jets, jet control

i have a 73 honda 350g,  when the choke is on it runs perfectly.  when i take the choke off (even when its warm) the bike stalls.  even if i keep the throttle on when riding it, it seems that it doesnt get enough gas (it runs very choppy and jerky).  i put new spark plugs in.  my question is does it hurt the bike to drive it with the choke on all the time?  and what steps should i take to get the bike running smoothly without the use of the choke?

I think you'll find the low speed/idle jets are plugged in the carburetor.  The idle jet control the fueling from zero throttle up to about 1/8 throttle opening.  You'll have to take the carbs off and remove the low speed jets and make sure it's clean inside.  I often push a very small wire through the jet to make sure it's clear.  Once the jets are cleared, I think you will find the bike will run without the choke.

You can run with the choke on but it will use a lot more fuel.  The choke works by closing off the inlet to the cylinders so it sucks more fuel out of the float bowls.  If you run that way all the time, you could foul plugs, or choke off the air flow to the engine reducing the power output.
