where is the oil filter on a 2000 honda 750 ace?

Mike, my experience is with older pre-82 Honda but try looking underneath the engine, right in front of the rear wheel, on the left side of the crankcase.   That's where the oil filter is on wife's 700 shadow and those two engines are similar.
