Motorcycle Repair: Iron head problems, jet start, good starting point

i have a 79 iron head that i have been working on it ran purfect in 05 befor i began my work.  this past sumer i started it up again and it started extremely hard and if i woud let my hand off of the throtel it would die.  I took it for a ride and it seemd to drive alright but if i let my hand off of the throtel all of the way it would die.  The work i did was strictly cosmetic but i did take the carb apart to clean it is it possible that imporper carb adjustment could be my problem and wat would you say is a good starting point for setings on my carb it is a S&S SUPER SHORTY.  
p.s. i have looke all aver for an oil filter on my bike and i cant find it did 79 sportys come with filters or is it possible that the previos owner removed it

Sam, I hate to say it but '79 was the worst year for Sportys.  Everything is a little different.  Anyway they didn't have an oil filter on some models.  The XLT had it and it is located in the twist off oil tank cap.  If yours just has the rubber plug dipstick oil cap you have no oil filter.  The reason the bike is dying is your idle jet is partially or fully plugged with varnish from sitting or your idle speed is just set too low.  You need to take a piece of wire or an .018" needle drill and ream out the idle jet (the small one off to the side of the main jet).  Start with an idle mixture screw (on top) setting of 1 1/2 turns out. Turn the idle speed screw in (on left side looking at the air filter) so you have a real high idle and then back it off until it's idling at about 900 rpm.  If you set it too low you will have hard starting. Turn the accelerator pump screw in and then back that out while you keep cracking the throttle until the hesitation stops.
