Motorcycle Repair: S&S Super E Carb, jet sizes, ground pounders

Hey Johnny,
  I am trying to find the right jet sizes for a 95 FatBoy w/ an S&S Super E Carb and Sampson Ground Pounders.  There was a performance cam upgrade done by prior owner and don't have any info on what kind etc.  The plugs foul after about 15 minutes and it's got flames out the pipes and carb.
Any help you can offer would be appreciated.

IF THIS WAS MY BIKE THE FIRST THING I WOULD DO IS GET RID OF THE JUNK PIPES AND INSTALL A GOOD EXHAUST SYSTEM THAT LETS THE BIKE BREATH AND MAKE HORSE POWER AND TORQUE. I WOULD INSTALL A WHITE BROTHERS E SERIES 2 INTO 1 EXHAUST SYSTEM AND ALSO CHANGE OUT THE PRIMARY MOTOR SPROCKET AND CHAIN TO THE SCREAMING BEAGLE 21 TOOTH MOTOR SPROCKET KIT. NOW I WILL BET YOUR BIKE WILL QUIT FOWLING OUT SPARK PLUGS AND RUN LIKE A BIKE YOU ALLWAYS WANTED. OH YEA TRY A 28 LOW AND A 68 MAIN JET IN THE E CARB WITH A K&N HI FLOW AIR FILTER. JOHNNY
