QUESTION: Temperature gauge wont work on my 1989 nissan sentra

It is either the gauge or the sensor.  Most of the time the sensor is what has gone out.  Get one at the local parts store and you will know what you are looking for.  Most of the sensors are close to where the upper radiator hose connects to the engine.

QUESTION: i have changed the sensor and it still does not work. i have also changed the gauge itself. I was told that i could bridge the two wires from the sensor, turn on the ignition and the gauge should shoot up. when i do that i hear a click under the carburetor/fuel injection and nothing happens

I would verify that the sensor you replaced is the correct one.  Now, if you reduce power to nine volts and then bridge the gauge to ground the meter should move.  If not the meter is defective.  I would first check to make sure you replaced the correct sending unit.  There used to be three on older cars.  One for the fan, one for the gauge and one for the computer.
