Pontiac Repair: Overheating, blown head gasket, grand prix gtp

QUESTION: I have a 1997 Pontiac Grand Prix Gtp with a 3.8 liter supercharged engine it overheated severely and i thought it was the Intake Manifold Gasquet, i got it worked on and all he did was silicone the intake and replace some hoses and the thermostat.  It now runs at 210 degrees all the time which is right in the middle of the gauge i know it is supposed to run cooler. What is the problem? Thank You

Do the electric cooling fans come on and run? do you have a scan tool that you can actaully look at the engine temp sensor reading? if the fan come on and run  for a short while and then cycle back off then it's probaly okay if the fans come on and the temp keeps creeping up then something else is wrong either an air flow issue across the radiator/condenser or an engine mechanical issue like a blown head gasket cracked head etc... these engine have a 195 degree thermostat but the temp can get to upwards of 225 before the fans come on and run. if the car has A/C and it still works doe the fans come on after the a/c has been on for just a short while. does it run hotter when the a/c is on? it's possable the gauge got messed up if you overheated it that bad but I doubt it. that's why if you had a scan tool you coule compair the gague to the actual temp reading and see how close they are to each other... QUESTION: only when it is idling or i am in traffic does it ussually get up to 210 this could be an airflow problem couldnt it? like either cooling fans or their belts? thank you

when i mean air flow problem I meant plugged up fins in the radiator or condenser from dirt/leaves tree pollin etc.. Is it missing the air dam under radiator? "Plastic defector" do the fans run? They are electronically controlled not driven by any belt.
