Answer
Hi Stuart,

I was just advised your question had been submitted but never answered.  Apparently, with the volume of questions, this happens sometimes.  Luckily, we don't have similarly unexplicable issues with our Porsches, right?  Oh yeah...your question...

I think you were on the right track with the air flow meter.  My experience is that the "meter", which is actually a doorway through which intake air passes and is measured, then metered...always gets it's share of crud and gunk accumulating on its parts, especially the hinges.  This causes the door to be hesitant or balky in its movements, which often translates to a feeling that the engine seems fuel-starved for a split second...just enough for your adrenalin to kick in...and then poof, all is well again.

Having changed the meter for another should at least have given you a slightly different outcome...and this is puzzling...but I'd re-focus on this at this juncture and see what I could see.
