Toyota Repair: Maintainance Service, fuel system service, differential fluid

My next question is: how technical it is for trasmission service? Can I trust a repair shop vs toyota dealer?
Also, how about differential oil change? What is that for?

Question -
My 99 camry is over due for a maintainance service. The mileage on the car is 85k.I recently had a water bump problem and had it replaced together with timing belt. My question is: do I need to have valve adjustment done? The car runs great. I am afraid that human error may cause problem, maybe I will be better off leaving it alone?
Also, I have never had fuel service done. Do I need one done? Besides changing fuel filter, what else is needed? A dealer quoted me $600 for tune-up, fuel service and transmission service. Now this car causes me way over $1000!

As long as the engine is running smooth with no problems don't waste money on the valve adjustment, I have seen very few ever go out of adjustment.
As far as the tune up goes, replace the spark plugs, the air filter and the fuel filter, the fuel injection service is up to you, I personally think it's not necessary except for maybe maintenance purposes, I guess it does remove some of the carbon deposits in the intake system.
Definetely do the transmission service, I assume at that price they are going to hook up a flush machine to remove all the old fluid, it is worth doing, if you have to choose between the fuel system service and the transmission service do the latter and forget the EFI service.

I would put more trust in the Toyota dealer than some independent repair shop to do the job right, if it is a 4 cylinder Camry the differential is seperate from the transmission as far as the fluid is concerned and needs to be drained and refilled, that's no big deal, if it's a V-6 the differential fluid is changed along with the transfluid because both share the same fluid supply.
