Triumph Repair: Fascia, wood glue, veneer

I am refinishing the fascia (dash) sections on my 76 Spitfire.  I sanded the clear coat and the flaking veneer away.  There seems to be a second veneer before you get to the plywood.  I noticed that the layers seem to alternate between a yellow wood; (pine?) and a darker wood.  The layers came unglued so I used a syringe and squeezed wood glue between the layers and clamped them overnight.  My question is- after sanding the clear coat away and what appears to be the first layer of veneer, the next layer looks good.  Can I just stain that layer and apply five or six layers of polyurethane.  I would only loose maybe 1/16 of an inch in width or will I have to reveneer the entire surface?

Hi Matt,
You are removing the veneer and working on the plywood. If you get all of the veneer off without damaging the plywood and like the looks of the plywood I see nothing wrong with finishing the surface of the plywood and urethane it. I have seen friends make their own wood dash with plywood. I have had a couple with bad and missing pieces of veneer and I just took all the veneer off and bought some veneer and glued it on and urethane that.
One layer of veneer missing will not hurt anything.
