UK Car Repair: 2000 Jaguar S-Type 4.0, jaguar s type, radiator hose

My car runs fine, but very frequently, the temperature will rise very quickly  (in a matter of seconds). I can bring it down to an acceptable level by turning the interior heat on high, but this is not a fix. Normally, after turning the car off, and letting it sit for a few minutes, I can resume driving with no indication of over-heating. (The car doesn't appear to be over-heating, but the temperature sensor shows it is). How should I go about solving/repairing this problem?

Is the engine actually getting hot?  It may just be a sensor problem.  This type of fault is most often caused by air in the system,. With the car cold, make sure the system is filled properly. You can then attempt to bleed it out by squeezing the most convenient radiator hose a number of times with the pressure cap off.  If all is OK, it would be worth checking the thermostat.
