You didn't mention if the tires involved are "P-metric" tires, but the dimensions that I checked are similar for both P-m and the metric size designations that you described above.
First, the 215/55R16 tires will be nearly 0.90" smaller in diameter than the 215/60R16 tires, and outside of the generally acceptable limits within the tire industry ( 1 - 3% max. diameter difference). Your vehicle owner's manual may specify a stricter limit.
Second, we must consider the load carrying capacity of the 215/55R16 vs. the 215/60R16.  You should always apply a replacement tire with a LOAD INDEX at least equal to the original tires on your car.  For example if the LOAD INDEX on your original tires (molded on the sidewall following the size designation such as: 215/60R16 94Q) is 94, the replacement tire should also be 'rated' at 94.  
If your original tire size is 215/60R16, the load index should be:
If P215/60R16: 94
If 'Euro hard metric': 95 for Standard Load, 99 for Extra Load
I don't recommend fitting the 215/55R16 due to their smaller diameter and the possibility that their load carrying capacity is inadequate for your vehicle.
