Motorcycle Safety & Driveability: Picking a econ. bike for commutes, honda nighthawk, good mileage

I am 63. I rode honda 50/passports in early 60s and a  1972 honda 350cr trail street for 30,000 mi.in 1972--1988 I am looking for a bike/ scooter now that gets good mileage, 55-100 mpg. that has at least 25hp and cruises at 65-75 on interstates.  I want reliability, safety, economy and ease to work on. regular gas. 4 stroke?  Maybe Shaft drive?
I want a used one under say 3000$. I go to la cal  and  las vegas every 6 months and could buy there and bring to wash state.  maybe 125cc to 500cc+? 850?  I subscribe to rider mag.  any suggestions?

Thanks for writing to me. Offhand, I' suggest the Honda Nighthawk. You have both 250 and 750cc options. Both are good bikes in their own class, and are found to be particularly useful for born-again riders. The 250 shoudl suit you perfectly - believe me, it's got enough grunt for everyday use and the occasional ride on the highway!
