I'm putting a touch-screen DVD player in the dash myself and i was trying to find if they had the installation kit and wiring harness for this car, I've seen some but don't know if they're the right ones. I don't know how it splits into the 8-speaker bose system.

oh boy are you going to have fun!  changing the head of a bose system doesnt always go well.  bose systems have VERY odd impedance speakers and they have a factory amp hidden in the car somewhere.  these amps are known for blowing out all the time.  plus interfacing to it can be a pain.  These infinity car's bose system are always having problems.  I always recomend just gutting it all and starting over.
Check out www.crutchfield.com for the dash kits and wiring (use the "find what fits my car" but again, be forwarned about the bose system.

OOPS! sorry about that!  hmmm... If I were you, I'd say if it aint broke dont fix it.  OR if you are really adventagous and have a lot of money and time on your hands, strip it all and start over, but trying to just change out the head unit may prove extreamly difficult.  
I also tried looking at www.metraonline.com and they list your car but then they show a nissan adapter that fits some infinitys but doesnt specifically show yours.  and its just the amp intigration harness, it's not the stereo harness. see it here:

Really your only option is to get a meter and start testing all the wires in the harness and making yourself a little chart of what wire is what.  Once you identify and find everything you'll need to hook up the new head unit, then and only then, you can cut the old adapter off (LEAVE PLENTY OF ROOM TO RECONECT IT IN CASE SOMETHING GOES WRONG) and start splicing your new wires in.  I can help you with this if you have a meter.
