Motorcycle Repair: 1981 Suzuki GS 250T, mc repair, suzuki gs

Hi Mark, My husband and I bought a 1981 Suzuki GS 250T about a month ago. We have torn it completely down as well as rebuilt the carburator (just cleaned old unworn parts - bike had very low miles). One of the carburators was pretty gunked up but we managed to get it pretty well cleaned out. The bike still has idling problems. We can not find a happy medium between it wanting to stall and it revving too high. There was a couple of jets in the carburator that we did not touch because we thought they were factory presets. Not sure what to do next.
