Motorcycle Repair: evo help, evo motor, dual carb

hi mike i have a 92 softail "stock" motor with a dellorto dual carb 40 mill.my bottom a top gaskets are leaking and it is burning a lot of oil,i mean alot.i have bought a manual and tore down the bike."I am getting some help"but i cant see too much that could be wrong as far as pistons or even bad cyl.s but the valves are really black and caked on .i was just wondering from this info or if you needed more could it be the valve seats creating the oil problem?i am a machinist so i have to take the cylinders to work to check them.but i tell ya what they  do look pretty good.can i get away with reassembling them if i only need head work?any info would help thanks.

When you say its burning alot of oil, I assumn you mean black smoke from the exhaust?
If it is then there are two places that it can come from. Around the pistons or the valve guide seals. You will need to mic the cylinders. In order to do that in a EVO motor you need compression plates. The cylinders have to be under pressure to properly mic them. Being out of the bike they are egg shaped. Even if they are within tolerence you still need to clean up the cylinders by honing them and rering them or it will smoke due tot he fact the new rings will not seat.
The other place is the valve guide seals. Since the heads are off I would go ahead and do a valve job on the heads.

The black you see on the valves is from the burning of the oil.
