I have a backup vehicle and rarely drive it. So I just buy the basic coverage. I plan to drive that vehicle for a vacation for one week. Can I add the full coverage and then cancel it after my vacation?

  Yes, you can.  I am not aware of any law that would restrict you from purchasing full coverage on your vehicle or restrict you from canceling that coverage at any time.  Your insurance company may have some questions, but it should be possible for you to do what you want.
