So I was walking to my car and noticed something hanging down under the front end, when I pulled it out I realized it was my A/C belt, I took a look and there is a huge covering on the front end making access to the engine a challenge...how do I get in there to replace the belt?

Well, it might not look like fun, but that engine cover has to come off.  Now, we're not talking about the plastic cover over the timing belt (toothed belt that drives the camshafts in the top of each head), 'cause you shouldn't have to touch that.  It has become fashionable to put decorative covers over the top of engines to hide all the fiddly bits and make everything look cool and powerful.  Just get that off of there, shouldn't be more than half a dozen easy to remove fasteners, and you'll be able to get at everything easily.  While you're under there give all of the wiring and vacuum hoses the once over, you'll never have a better time to head off a future problem.
