QuestionI have a 1999 Pontiac Grand Prix GTP. I have a Kenwood DDX8019 I would like to put in here but would like to know how much cutting and what not is involved and if it would even fit with a stock look to it.

Above will help you with wiring. But, best if you order up a wiring harness which will plug into the present car wiring; then with the wiring of the Kenwood you can just match up the wiring.
Making the Kenwood fit the Pontiac hole in the dash may be a bit challenging, but I recommend you take a trip through installer.com looking for the brackets, adapters, removal tools, etc. to do the specific job at hand.

Go to the above site and skip down to the GM section and you should find one that will work for your automobile. Places like crutchfield and bestbuy also have these same brackets and mounting hardware.
