Chevrolet Repair: 2000 chevy silverado hesitation, check engine oil, chevy silverado

My problem just started yesterday.  While pressing on the gas from a stopped position, the truck 'bucks' before acceleration. Also while driving it bucks, but doesn't stop...it hesitates almost to the point of stopping, but acceleration eventually picks up. Today I put more gas in thinking the gas was low or 'bad gas' and the tank is full now.  Most of my morning commute is highway driving @ 70-75mph.  Durring the drive there was some hesitation, when I stopped at a light the truck kinda shook a little, feeling like it was about to cut off.  I noticed that the oil gadge needle went down to between the 40 and 10 line, while sitting at the light.  But when I pressed the gas to go, it the oil needle went back up to between the 40 and 80 line.  Then my next stop at a light, the truck cut off when I gave it gas to go.  I coasted for a bit, and then restarted it with no problem.  However, the hesitation was really bad after that.  There are no lights on (check engine, oil) at all, and I have no idea what the problem is.  Please help.

The first thing I would do is test the fuel pressure. As a guess, I would replace the fuel filter.

The next guess, without some testing, would be a sticking EGR valve, which acts like a vacuum leak, and actually is. That is what yours sounds like.
A vacuum gauge connected to it should tell pretty quickly.
