Chrysler Repair: headlights and interior lights flashing, door latch, question pool

I have a 2001 Chrysler 300M and a 2002 Jeep Liberty.  They both have issues with flashing headlights at inopportune times.  Day/night, doesn't matter. Tonight, my neighbor came over to inform me my Chrysler's headlights and interior lights were flashing.  The car was not running and hadn't been for 3 hours.  It stopped itself, then started again about 30 minutes later.  It has an automatic setting for the lights which I keep on but I got into the car and turned the headlight switch to manual off.  It didn't happen again.  So I'm thinking there is something wrong in the automatic setting.  Only problem with that answer is the Jeep Liberty does not have an automatic setting.  So I'm hoping you can help here.   Thanks so much.

If the lamps are flashing rhythmically, rather than randomly, it may be that you have a false theft alarm signal due to a too loose door latch which is setting off the theft system (except for no horn? is the horn working?). Try getting in the car, closing all the doors, then try to push outward on all the four doors to see if the interior lights come on from doing that. If so, then move the door striker loop, mounted in the door frame, in-board a fraction of an inch which will secure the door more tightly in the frame and avoid such a false alarm.
There are other possibilities but this is the most likely.

they haven't done it again on the Chrysler because I stopped putting the lights in Automatic mode. Just use manual. But the Libert still flashes all lights occasionally while driving down the road.

On the Liberty, if you mean the interior lights(not the headlamps) only are flashing  randomly, then I believe that the door slightly ajar as I described when I first responded is the most likely cause.
On the Chrysler, yes, that automatic headlamp circuit or ambient light sensor is the probably cause. Let me know if you want to try and deal with that or if you are content to just not use that 'feature'.
