I have a 2000 sebring covertible and want to know if I can bypass the compressor by measuring it out and getting a belt to fit, so it can be driveable for now?

In principle I see no reason why not. Just make sure that you get one with the same cross-sectional dimension. One issue to consider would be whether the tensioner/idler pulley adjustment will effectively put sufficient tension on the belt. You didn't mention which engine is in the vehicle, but in any case that should be evaluated for the new simpler belt pathway. Another approach, if the compressor clutch pulley is not the problem but the compressor is, would be to disconnect the clutch actuator wire so that the compressor will not be activated. If the clutch pulley itself is bound up then that isn't an option.
So those are factor to consider as I see it.
