what will happen if i unplug the map sensor and drive ?


Answer
The engine may start and run, but not very well because the mixture will lack information as to what the local barometric pressure is and also whether you are accelerating or decelerating which changes the pressure; so the mixture is not likely to be optimal. And your mileage will drop. The engine controller will try to adopt a compromise value (based on rpm and throttle opening) to keep it running, but that is about all.
No guarantees. But you can try it if you like.
