Classic/Antique Car Repair: Choosing the right Carb for 68 Buick 350., jolly green giant, stock cam

Question
I have a 68 Skylark with orginal 350 recently rebuilt.  Bored 20 over just to true it up.  Stock cam.  I would like to replace the stock Rochester 2V with something like a Holley 350/500 2V.  Original carb works okay, but seeking just a little better overall performance.  Any recommendations or suggestions?

Answer
Jay, I am a charter member of the "If It Ain't Broke, Don't Fix It" club. Now this is just my opinion, if the Rochester is running fine, leave well enough alone. The Rochester, in my opinion, is a very much under rated carburetor. I think the Holley may have it's strong points, like being able to pour as much fuel into a highly modified engine at high RPM's as the jolly green giant can pour in with a bucket and a funnel, but I think that any gain would be so small that it would not register except in bragging rights.
