Classic/Antique Car Repair: 283ci head gasket, head gaskets, head gasket

Installing GM part # 10105117 head gaskets on 1959 Corvette.
The gaskets will go on the block with either side up but one side of the head gasket looks different because of the amount of metal exposed.One way there is only metal around the cyl bore, the other has metal over a much larger area of the gasket. Which side up is correct?

59 eh...nice, I got a 61 with base 283 but i have ordered vortec 305 heads,alum intake and custom quadjet from SMI. I'M just going to bag up all my original stuff, although it is numbers correct right now I'M not out to try and impress NCRS

Most head gaskets have markings denoting (UP)or logo which denotes UP so unless you see a GM stamp its
the side with the most area of metal is the block side.
