I can start the truck and it will die if you step on the gas. I can restart the turck right away.

I would start by checking your fuel pressure. On a 6cylinder it should be around 50psi and the V-8 should be 32-40psi.  What you are looking for is too see if it drops below that when you accelerate.

Also, check the mass air flow sensor for dirt on the hot wire. It is located inside the air filter housing. You can see it by looking down the air intake. make sure there is not dirt stuck to it.
