Ford Repair: 1995 Ford Escort GT rear disk brakes, disk brakes, rear brakes

We have just purchased a 1985 Ford Escort GT for my daughter it has just over 80K miles. I doesent seemed to be abused but it needs brakes I have changed the front brakes. The rear brakes are disk and I had trouble getting the old pads off. and I had trouble getting a new pad in and also  I cannot seem to get the plunger pushed back in far enough to get the both the new pads in. Is there something I am not doing right or can you give me any Suggestions Thank You  Jeff

It sounds like the piston is not seating in it's rest position to allow the pads to be installed.
