How do you replace the rear window brake light on a Hyundai Sonata '05 ?

I've never had to remove a center high mounted stop lamp on a 2002-2005 Sonata because they're LEDs in the U.S., and I've never seen one fail.  Not sure if the LED's are used in your location.

According to the shop manual, you simply need to remove two bolts/nuts from underneath (inside the trunk) to remove the lamp assembly.  If you're simply looking to replace the bulb (and if you have a lamp with a bulb), you may be able to simply remove the bulb from inside the trunk.
