what does it mean when the revs reach below 1000rpm and the car goes to cut out completely but only when air conditioning is on?

Zoe: You need to have the car coded and see what the computer tells you is going on. But could be the ac compressioner is bad, so it is making the engine revs up but then the engine can not pull it and so the computer shuts off the engine.
