my 1997 mitsubishi eclipse gst when driving actually when you step on the accelerator it chokes.  also the starter that i bought from autozone does not fit and has to be fitted to go in it grinds when you try to start it.

Martin,
Your starter definitely shouldn't be grinding.  Sometimes the aftermarket products at AutoZone and other parts stores are built to a general spec to be able to fit in multiple cars.  If you want to be sure you're getting the proper starter that fits exactly, find an OEM starter.  If it grinds while starting, that probably means the starter motor continues to turn even when you stop turning the key.  Or, the motor spline is not matched up properly with the flywheel and that can cause it to make a grinding sound as well.

As for the choking problem, that is probably being caused by a lack of fuel and/or air.  If you haven't replaced your air filter or fuel filter within the past 2 years, this would be a good time to do so.  Check your Mass Air Sensor and your fuel pump to be sure they are operating within tolerance.  You may also want to inspect your catalytic converter.  It may be clogged and needs to be replaced.  Check to be sure your timing is also set properly as well.  For your car, you should be replacing your timing belt every 45k-60k miles to be safe.
