I want to change the spark plugs on this full-sized Montero but it looks like I need to take off tht intake manifold or something of the like.  How do i go about changing the plugs on this vehicle.  I just don't wanna have to remove more than necessary.

Yes, you most likely will need to remove the intake manifold plenum in order to reach the some of the spark plugs.  This will require disconnecting several hoses, cables, and possibly some emissions components.  If you feel comfortable enough to attempt this yourself and you have some sort of reference to guide you (like a service manual), this shouldn't be a huge problem.  Otherwise, I'd suggest having a mechanic do this for you.  For a job as routine as this, you probably would not need a dealership mechanic.  Most any local mechanic shop can handle this.
