Motorcycle Repair: Mikuni carb fine tuning on Yamaha Radian YX600 1986 model

Hi William,
Since I had installed Dynojets and pods (not K&n) on the bike, with around 3.5 turns on the fuel screws the bike was running lean RPMs would go upto 4,000 as the engine heated up.
Fixed that by setting fuel screws to about 4.25 turns.
Also set airflow butterflies using needle spacers, and got bike to idle and rev smoothly with good power throughout rev range.
I use 2 oz of Sea Foam for 2.5 gals of gas.
The spark plugs tips have no deposits and are light colored, with some black deposits on the rims.
I need full choke to start bike at 80 degrees F. slowly close choke as bike warms up,this can take 5-10 mins.
Problem:

1. Bike was parked on side stand and not started for 3 weeks, now idles fine but get uneneven acceleration with surges, dead spots and exhaust is popping. I suspect some ethanol deposits may have built up. Shall i try to just drive off the deposits with some additive or do i need to re-clean the carbs and check for vacuum leaks?
2. Do I need to get K&N pods, or will oiling these ones be ok. I have new rubber intake boots.

Normally when modifing exhaust and air filter I install a stage 1&3 Dynojet
jet needle kit. They have adjustable jet needles and are designed for these kind of modifications.
First. yes do check for vacuum leaks first.
Secondly. I have heard of people using a soup can lid with a 1" or different sized hole in it to insert into the pod filters to create some restriction so the fuel/Air ratio dont need
to be made so Rich.
_Popping is a sign of a Lean Fuel Mixture.
Modifing exhaust and filter move a lot more air through the carbs.
The mixture screws are often not enough to get the rich mixture needed.
Mixture Screws are somewhat of a fine tuning adjustment.
Jet Needles and Main jets are the next to adjust if a proper fuel mixture
can not be achieved.
That whay I Love the dynojet Kits. Adjusting the jet needles is easier than changing Main jets.

PS.  Only use Seafoam as Directed.. It can damage Seals, needle valves, O-rings.
