Hi Bill,

What would be the most likely culprit?

Often (more then 50% of the time), when warming up, as my temperature gauge needle gets to the top of the "C" my bike stalls.

At speeds around 60, it's as if I turned off the key for about 1 or 2 seconds and at slow speeds it has to be restarted. Occasionally, it seems that it gets flooded and is difficult to start.

Daryl. how long has it been for a full tune and service for the bike?  

Carburetor air cut valve diaphragm can fail, causing an air leak/backfiring and poor idle.

Fuel filter should be changed and fuel pump pressure checked. There should be a fuel pump relay that could be failing or the pump itself may be at the end of its life.

Any vacuum hoses should all be checked for cracks or looseness at the fittings.

Sounds like either too much air or not enough fuel delivery. After 25 years, it probably needs a good going over from top to bottom and front to back, checking electrical connections, spark plug cap resistances, etc. Take a close look at the spark plugs and see if they are dark brown/black from fouling or bright white from lean jetting/air leaks.
