Motorcycle Repair: exhaust, vance and hines exhaust, stock exhaust

Bike: 2000 Soft Tail Springer.  1550 kit, 257 cams, larger bore carb (44mm). Vance and Hines Exhaust

Question: Would like to put stock exhaust (fishtail) back on but need better sound.  What would you use to cut the baffles out? Is there a way to "partially" remove them?  What performance issues should I expect and how to rectify them?  Thanks.

Welded baffles are a bear to get out. You have to use a long screwdriver and hammer and break the weld. They are all one piece so you cant remove just part of them. The more open the exhaust is the leaner the bike runs and if they are to open you loose performance in midrange
