Answer
I've never changed one on a BMW, but most older bikes have speedo cables that are very similar in design. One end should be screwed onto the back of the speedometer and the other, depending on the bike, goes to the front or the rear wheel or the transmission. Normally, all you have to do is loosen the round nut at the ends of the cables, pull each end clear and then pull one end of the cable until it is clear of the bike. Make note of the routing so that the new one follows the same path and does not get bent or kinked. If the cable weaves in and out of wiring harnesses and hard to reach areas, just tape one end of the new cable to the old one and pull it through until the old one is clear of the bike.

Both ends of the wire cable itself should be squared off, you need to ensure that it fits properly into the square holes when installing the new cable. Its best to do this one end at a time and leave the rounds nuts loosened off until both ends are installed.
