Motorcycle Repair: carburater problems, yamaha maxim, needle valves

Question
i have an 82 yamaha maxim with a 4 carb setup. i bought new jets and tried to install them.  i tightened them down the first time, installed the carbs and the bike idled out of control.  so i took them back out, taking my friends advice, i backed the jets out one half turn and reinstalled everything. i started the bike and it idled beautifully.  Turned the bike off and restarted it and the bike bogged down and stalled the second i let off the throttle. i've had this problem all summer and cant fix it.  am i missing something? or have i miss diagnosed the problem.  hope i was clear enough.  please write back soon almost out of summer. thanks
