I recently purchased a 2007 6 speed street bob.  Can I punch the baffles without compromising the bike?  Will I need a high performance air kit?

Hi JoDene,I wouldn't,if you are looking for sound go purchase a free flowing exhaust(ie;V&H,supertrapp,or reinhart).Then you you should get a hi-flow air system and a re-calibration or jet kit.Just punching out the baffles will damage the oxygen sensors and without proper exhaust scavenging burn out the valves.
