Motorcycle Repair: GSXR 907, dwarf car, gsxr 1100

Question
I recently installed a 907 big bore kit on my 92
gsxr 750, first i was wondering what engine temp
would be excessive, I checked after riding a fair
distance middle of the jug was approx. 247F
second, when hot, just as you open the throttle
in any gear under a load it breks up.
with a little more throttle it clears up
wide open runs like a raped ape, it has a stage 3
jet kit and full yoshi r&d exhaust
any other performance tips for this bike and application would be great
                         thanks

Answer
Shane, those temps are not far from norm, i recently built a dwarf car motor gsxr 1100 with a wiseco kit.. i think it was the 1195 kit. but anyway after first set of heat races we were at about 250 degrees on the jugs. so i think that is the norm for your application as well. secondly your jetting is just off on the low end. sounds like its too much fuel try adjusting your mixture screws in and you might have to change a few jets on the slow mains to get it perfect. but its all in the jetting.
thos gsxr will run when they can breathe. cams from yoshi the stage ones and a good port job will make wonders. we have a gsxr 1100 here when done on the dyno was 227 horse and its going into a dwarf car go figure..
