Motorcycle Repair: bad running at low speeds plus engine cut out, kawasaki 750, loose power

Hi there...
I have a 91 Kawasaki 750 zephyr which i'm having the following trouble with, at low speeds the engine will over rev and sometimes loose power causing the bike to kangeroo along the road, it will start first time every time but the choke has to be millimeter acurate or it cuts out or over revs again once you get it right it will tick over happily until i put the lights on then it will cut out again unless i re-adjust the choke or keep it reving ive inherited the bike with these problems and dont really know where to start any help would be greatly appreciated...

James, a good place to start i think would be looking into those carbs. has the bike sat for a time ? if it has yeah i would start there, a good cleaning i suspect is in order. i dont understand the kangeroo part, what the bike is doing, could you please explain. but what i am understanding the carbs are first in order.
