Motorcycle Repair: oil consumption/coolant loss, 2001 honda sabre, coolant loss

I have a 2001 Honda Sabre 1100, 68k miles.

I am using about 1 quart of oil every 1000 miles. But no signs of oil loss, no drips, no smoke. It was loosing coolant, the mechanic at dealership told me that it was possible that motor was running hot enough to burn the oil - whatever. Said, the radiator cap was bad, replaced.

Still using about a quart for every 1K miles.
However, it is not as bad if I run 60 - 70 mph, guess I run it fairly hard 75 - 80. I drive about 80 miles a day to work and back.

 The maechanic could be right, however there are also other possibilities.
 Was the 50,000 mile valve adjustment done?
 If not, then you could have oil seeping through the valves and burning with the  fuel.
 A good indicator would be if there is white smoke coming from the exhausts.
 The amount of white smoke is a good indicator of how much oil is burning off.  So, based on what you have been saying, the oil isn't burning off in the cylinders.  At least not enough that you can notice.

 Also check your compression against what the manual says it should be.  If it is near the outside edge of good, then you could have a small leak in the piston rings.

Start with that and let me know what you find.
